Vegan Minestrone – easy and delicious

My Favourite Soup



From here on it’s gonna be delicious!

My favourite soup of all times is a vegan minestrone inspired by the recipy of Attila Hildmann. It is super easy and fast to make and everyone I ever served it to thought it was very tasty. Even my dad and he’s really not that big of a fan of tomatos.

Ingredients (serves 4-6):
⦁ 4-5 medium sized tomatos
⦁ 4 celery stalks
⦁ 3-4 spring onions
⦁ 1 garlic clove (finely chopped)
⦁ 1200 ml vegetable stock
⦁ 1 tube tomato purree
⦁ 3-4 ts olive oil
⦁ salt and pepper
⦁ 1 tin corn
⦁ 1 tin kidney beans
⦁ cooked noodles
⦁ (any other kind of vegetable you like)

How to:

Chop up the celery, spring onions and tomatos.

Heat up a the olive oil in a tall pot. Put it the celery and spring onions and roast them gently 4 minutes on high temperature while stirring every now and then. Add the garlic.

After 1 mintute add the tomatos and the vegetable stock and let it simmer at a medium temperature for another 10 minutes.

Now add the tomato purree, stir it and season to taste with salt ans pepper.
Pour in the corn, kidney beans and noodles.
